Michael Coldrick Named Chef De Cuisine
At Rivals Waterfront Sports Grille

Michael Coldrick has named chef de cuisine for Rivals Waterfront Sports Grille, Coldrick will lead the culinary team in producing cuisine that features a creative spin on classic American dishes. "First-Half" appetizers kick-off with selections such as Jamaican Spiced Chicken Wings with Black Bean Relish, Bloody Mary Oyster Shooters and unique signature Sliders. Highlights in the "Second-Half" entrees include Sear Tuna Nicoise Salad, Pilsner Beer Battered Florida Snapper, Tickle Your George Dickle Bourbon Braised Baby Back Ribs, a 10 ounce Kobe Burger Patty Melt, along with several varieties of mouth-watering Flatbreads and Black Angus Steaks. A streamlined, simplistic, yet profound mixture of martini's, drafts and wines completes this creative food and beverage experience.

Prior to joining Rivals, one of eight unique Diplomat Dining experiences, Coldrick was executive chef at Trina restaurant at The Atlantic in Fort Lauderdale. He was also executive chef at The Castle at Tarrytown in Tarrytown, New York. Before that, Coldrick worked under Gray Kunz at Lespinasse in the St. Regis Hotel in New York and with David Burke at Park Avenue Café in New York. He has also worked at the Doral Telluride Resort & Spa in Telluride, Colorado, and the Lowes Vantana Canyon Resort in Tucson, Arizona.
